Tasty Apple Muffins

Apple Cinnamon Muffins – Gluten Free, Egg Free, Dairy Free, Nut Free

Perfect when apples are in season!

These muffins freeze well, so you can double the recipe and make enough to freeze.

This recipe can be easily modified to make either banana muffins or carrot muffins.

Ingredients

  • 3/4 cup of finely ground raw sugar
  • 5 Tbsp. of grapeseed oil
  • 1.5 Tbsp. of rice milk
  • 1.5 cups of all purpose gluten free flour - you can use any flour of your choice
  • 1 cup of peeled, chopped or grated apple (2 large)
  • 1/2 tsp. of sea salt
  • Optional: 1/2 cup of raisins or dried cranberries
  • 2 tsp. of baking powder
  • 1 tsp. of baking soda
  • 1 tsp. of cinnamon
  • 1/2 tsp. of nutmeg
  • 3 tsp. of EnerG egg replacer, mixed with 4 Tbsp. of water (or 2 eggs beaten)

Instructions

  • 1. Preheat oven to 400 degrees.
  • 2. Mix together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, raisins and salt.
  • 3. Make a well in the center and pour in the Egg replacer, milk, oil and chopped apples.
  • 4. Mix until dry mixture is moist but coarse and fill a greased muffin pan or paper liners 3/4 full.
  • 5. Bake for 14-16 minutes, or until toothpick comes out clean.
  • 6. Option: 1 cup of mashed banana instead of apple to make banana muffins
  • 7. Option: 1 cup of shredded carrot to make carrot muffins.
  • 8. Option: add 1/2 cup of chopped walnuts or pecans.
  • 9. Variation: In place of the 1.5 tsp. of cinnamon and nutmeg you can use pumpkin pie spice.
