You’ll enjoy this simple and healthy casserole.

You can always saute the veggies before adding to the tater tots to enhance the flavor, if you have time. This is especially recommended if adding mushrooms.

Garnish with fresh salsa or guacamole, or top with hot sauce for an extra kick!

Ingredients

  • 1 Bag of Frozen Organic Tater Tots
  • 1 dozen omega eggs
  • ¼ cup of unsweetened non-dairy milk (you can use ½ & ½ for a richer taste if dairy is not a problem)
  • ¼ tsp of sea salt
  • 1/8 tsp of ground pepper
  • 1 red pepper, diced
  • ½ small onion diced
  • 1 cup of fresh spinach, chopped
  • Optional: mushrooms, shredded zucchini, fresh herbs like parsley, and of course, ¼ cup of shredded cheese or feta cheese

Instructions

  • 1. Preheat oven to 350.
  • 2. Grease a 3 quart (large) casserole dish with cooking spray.
  • 3. Add the bag of frozen organic tater tots to the bottom.
  • 4. Add vegetables to the tater tots.
  • 5. Beat eggs with milk, salt and pepper and pour over the tater tots and chopped veggies.
  • 6. Bake in oven for 30 minutes, or until the edges start to brown and separate from the sides.
  • 7. Allow to sit at room temperature for 5-10 minutes before cutting and serving.
  • 8. Garnish with fresh salsa or guacamole, or top with hot sauce for an extra kick!
