These gluten and dairy free breakfast cookies are kid friendly and are free of any added sugar. Add protein and these make a complete breakfast for even the pickiest eater.

Tip: to add protein to these delicious kid friendly breakfast cookies, either add 2 scoops of rice protein (I use ultra meal rice by metagenics) or add chopped nuts or nut butter. I’ve made this recipe with chopped walnuts or pecans and 1/4 cup of sunflower seed butter to add good fat, protein and help it hold.

These cookies can be frozen and reheated.

Ingredients

  • 1.5 cups of gluten free oats
  • 3 ripe bananas, mashed with a fork
  • 1 cup of unsweetened applesauce
  • 1/2 tsp. cinnamon
  • 1/4 cup of cranberries (raisins or vegan chocolate chips can be substituted)
  • Optional: 1/4 cup of chopped walnuts or pecans
  • Optional: 2 scoops of ultra meal rice protein
  • Optional: 1/4 cup of unsweetened sunflower seed butter

Instructions

  • 1. Preheat oven to 350 degrees.
  • 2. Mix mashed banana's, oats, applesauce, cinnamon and either cranberries, raisins or chocolate chips.
  • 3. Spoon one heaping tablespoon onto a greased cookie sheet.
  • 4. Bake for 25 minutes.
  • 5. Cool before serving.
