Breakfast Rice Pudding

Simple on its’ own, however, you can add chopped almonds, walnuts or sunflower seeds if you’d like.

Ingredients

  • 1 cup uncooked brown rice
  • 1 ¼ cups coconut milk
  • 1 ¼ cups water
  • 2 tsp. agave syrup
  • 1 tsp. cinnamon
  • ½ tsp. salt

Instructions

  • 1. Combine water and coconut milk in a pot.
  • 2. Bring to a boil.
  • 3. Add rice and salt.
  • 4. Simmer covered without stirring for about 45 minutes until liquid is mostly absorbed and rice is soft.
  • 5. Remove from heat and cool for 15 minutes.
  • 6. Stir in brown rice syrup and cinnamon.
  • 7. Add nuts and seeds if you like.
