Buffalo chicken

This recipe is packed with flavor.  The spicy and sweet complement each other perfectly, and thanks to the crock pot, it’s one of the easiest recipes to make.  If you want to make it even more shape friendly, use spiralized zucchini instead of sweet potato, it’s equally as delicious and has less starch.

Ingredients

  • 1 pound of organic chicken breast
  • 2 cups of organic/free range chicken stock
  • 2 Tbspn of organic corn starch, arrowroot or tapioca starch (to thicken)
  • 1/4 cup of hot sauce of your choice
  • 2 sweet potatoes, peeled, shredded or spiralized
  • 1 cup of coconut milk

Instructions

  • 1. Place chicken breast in the crock pot.
  • 2. Mix the corn starch, chicken broth and hot sauce and pour over chicken.
  • 3. Cook on high for 3-4 hours or on low for 6-8 hours.
  • 4. Turn off crock pot and shred chicken. Add milk and allow to sit while the sweet potatoes bake.
  • 5. Pre-heat oven to 375.
  • 6. Bake shredded or spirazed sweet potatoes for 20 minutes.
  • 7. Place baked sweet potato in a bowl, and top with buffalo chicken mixture.
