Chicken and Brown Rice Salad

Chicken and Brown Rice

A healthy main entree for the whole family.

Ingredients

  • 1 whole chicken, boiled or baked, with meat removed
  • 1 Tbsp. of minced garlic
  • 1 tsp. of iodized sea salt
  • ½ tsp. of ground pepper
  • 1 cup of chicken stock
  • 1 large onion
  • 1 cup of brown rice, cooked
  • 1 tsp. of cinnamon
  • 1/3 cup of pine nuts
  • 3 Tbsp. EVOO

Instructions

  • 1. Saute onion, pine nuts, cinnamon and garlic in olive oil until onions are clear, the garlic browns, and the pine nuts brown.
  • 2. Add cooked rice and pulled chicken.
  • 3. Add 1 cup of chicken stock and heat together for about 5 minutes covered.
  • 4. Serve with a green salad.
