Skewered Chicken

Chicken on a Stick

Serve with peanut sauce, teriyake sauce and sweet and sour sauce for dipping.
I buy gluten free peanut sauce and Ty Ling Naturals dipping sauce.

Ingredients

  • 1 lb of chicken breast
  • 12 bamboo skewers
  • 1/4 cup of gluten free soy sauce
  • 1/4 cup of EVOO
  • 2 Tbsp. of honey
  • 2 tsp. of sesame seeds (optional)
  • 1/4 cup of gluten free teriyake sauce
  • Optional dipping sauces: peanut sauce, teriyake and sweet and sour.

Instructions

  • 1. Soak bamboo skewers in a bowl of water for 10 minutes.
  • 2. Cut chicken breast in 3 thin slices. (You can buy chicken tenderloins or thin cut chicken breast instead of thick cut breast.)
  • 3. Mix the soy sauce, honey, teriyake and extra virgin olive oil in a bowl and add chicken.
  • 4. Marinate for 30 minutes.
  • 5. Skewer each chicken piece on a bamboo skewer.
  • 6. Pre-heat grill on medium heat.
  • 7. Spray grill to keep from sticking.
  • 8. Sprinkle sesame seeds on both sides of raw chicken and place skewered chicken on the grill.
  • 9. Grill for about 5 minutes on one side, and 3 minutes on the other side, until fully cooked.
  • 10. The chicken pieces are thin and will cook fast depending on the grill type.
  • 11. Plate the cooked skewers and may top with chopped green onion, cilantro or fresh cut limes for garnish.
