Corn and Black Bean Salsa

This simple recipe can be eaten as a salsa on corn chips, or even as a salad over shredded lettuce.

Ingredients

  • 1.5 cup frozen corn
  • 1.5 cup organic canned black beans, rinsed
  • 1 whole lemon, juiced
  • 1 whole lime, juiced
  • 1 Tbsp. taco seasoning
  • 3/4 cup of red onion, diced
  • 1 whole avocado, diced
  • 1 Tbsp. of EVOO
  • 1/2 cup cherry tomatoes, quartered
  • Optional: 2 Tbsp. fresh cilantro, chopped
  • Optional: 1 serrano or jalapeno pepper, chopped

Instructions

  • 1. In a bowl mix corn, black beans, chopped tomatoes, onion and avocado.
  • 2. Add taco seasoning, lemon & lime juice, EVOO and freshly chopped cilantro.
  • 3. Allow to sit in fridge overnight before serving.
  • 4. Serve with corn chips.
