Ingredients

  • 1 cup of crab meat, chopped
  • 3 Tbsp. of Butter
  • 1 Tbsp. minced fresh Celery
  • 1 Tbsp. minced fresh Onion
  • 1 Tbsp. minced dried Red Chili Pepper
  • 1 Tbsp. finely chopped fresh green chili pepper.
  • ½ Tbsp. of dried parsley
  • ½ tsp. of iodized sea salt
  • ¾ cup of cornbread stuffing
  • ½ cup of fresh shredded Monterey-Jack Cheese
  • 20 mushrooms for stuffing
  • ½ cup of water
  • ½ Tbsp. of raw sugar
  • dash of pepper
  • 1 egg, beaten
  • Smidge of paprika

Instructions

  • 1. Pre-heat oven to 375.
  • 2. Bring water to a boil in a small pot.
  • 3. Add sugar, salt, pepper, celery, onion, dried red chili pepper, green chili pepper, parsley and butter, and allow to boil for 5 minutes.
  • 4. Remove from heat and add cornbread stuffing.
  • 5. Mix together and cover for 5 minutes.
  • 6. In a bowl mix chopped crab meat and beaten egg.
  • 7. Add the cornbread mixture and mix well.
  • 8. Stuff each mushroom with the stuffing.
  • 9. Top all of the mushrooms with cheese and sprinkle with paprika.
  • 10. Bake for 12 minutes.
  • 11. Broil for an additional 1-2 minutes to brown cheese.
  • 12. Allow to cool for about 5 minutes before serving.
