Strawberry Yogurt Crepes

These crepes can be made gluten and dairy free and filled with delicious fillings that are healthy and high in protein. Enjoy for breakfast or brunch.

They are also great for company or a special holiday treat.

I have included several filling suggestions.

Fresh strawberry yogurt:

Take one package of fresh strawberries and rinse. Cut of tops and slice the strawberries into a bowl. Drizzle with 1/4 cup of agave and mix. Allow to sit at room temperature while you cook the crepes. Once your crepes cool, mix in 1/2 cup of Greek yogurt. Put 2 tablespoons of filling in each crepe, roll up and serve. You can also put some more over the top or sprinkle with powdered sugar.

Nutella and Banana’s:

Store bought Nutella makes a delicious chocolate hazelnut filling. I like to use about a teaspoon of Nutella and a row of sliced banana’s. Roll crepe and top with fresh cocoa powder.

Cheese:

Take 1 cup of cottage cheese and put in a bowl. Add 1/4 cup of agave and 1 Tablespoon of ground cinnamon. Mix together and put about 2 Tablespoons of filling in each crepe before rolling. Sprinkle with slivered almonds.

Ingredients

  • 1 1/2 cups of milk (rice or any preferred milk)
  • 1 cup of flour (buckwheat for gluten free, white, or whole grain)
  • 2 eggs
  • 2 Tbsp. raw sugar (fine ground)
  • 1 Tbsp of oil of your choice (EVOO)
  • 1/8 tsp. of sea salt
  • Optional: 1 tsp. of vanilla

Instructions

  • 1. Mix the ingredients until there are no lumps.
  • 2. Use a non stick pan and spray with cooking spray.
  • 3. Do not pour batter on the pan until it is heated (medium-high heat).
  • 4. Apply a very thin layer to the middle of the pan and swirl around to thin out.
  • 5. There is no need to flip the crepe if it is thin enough, it will cook through.
  • 6. Place the cooked side on a plate to cool, and repeat will the remaining dough.
  • 7. Fill the side that was face up (light colored side) with filling of your choice.
  • 8. Try one of the three fillings above: Fresh strawberry yogurt, Nutella and Bananas, or Cheese depending upon your dietary options.
