Grain Free Chocolate Coconut Cookies

You can make these egg free by using EnerG egg replacer. Many people also use ground Chia seeds, soaked in water as an egg replacer.

Ingredients

  • 3 cups of almond flour
  • 1/2 cup coconut oil, melted
  • 1/2 cup of raw honey
  • 2 large eggs
  • 3 Tbsp. of shredded unsweetened organic coconut
  • 1 tsp. of baking soda
  • 1 tsp. of sea salt
  • 1 tsp. of vanilla extract
  • 2 cups of raw cocoa powder
  • 1/4 chopped nuts (chopped walnuts, macadamia nuts or pecans)

Instructions

  • 1. Preaheat oven to 375.
  • 2. Combine all dry ingredients in a mixing bowl.
  • 3. Beat eggs, honey and vanilla together with a whisk.
  • 4. Pour the wet mixture over the dry mixture.
  • 5. Add melted coconut oil and mix with a fork until combined.
  • 6. Drop tablespoon size balls onto a cookie sheet lined with parchment paper.
  • 7. Bake for 8-10 minutes.
