A great tip: you can add one egg and about ¼ cup of gluten free breadcrumbs if grilling.  This will keep the burgers from falling apart.

To create a Greek sauce for burgers: mix yogurt, minced garlic, two tablespoons of feta cheese and parsley in the food processor.

Ingredients

  • 1 lb of ground turkey
  • ½ package of thawed frozen spinach drained
  • 1 red pepper roasted and diced
  • ½ cup reduced fat feta cheese
  • 1 tsp. minced garlic
  • 1 cup of plain greek yogurt
  • 1 tsp. of chopped parsley
  • 4 whole wheat pitas

Instructions

  • 1. Mix ground turkey, diced red peppers, all but two tablespoons of feta cheese, and drained spinach.
  • 2. Salt and pepper to taste.
  • 3. Mold into 4 burger patties and cook on grill,
  • 4. - OR - bake on foil in oven at 375 for about 25 minutes.
  • 5. Make yogurt sauce mentioned above.
  • 6. Serve burgers with yogurt sauce on pita bread.
