Hot off the grill - veggies!

Grilled Veggies

These veggies are not only delicious and healthy, but look gorgeous.  The balsamic vinegar literally turns sweet when grilled.

This is the perfect side dish for any BBQ.

It only takes 10-15 minutes for the veggies to be ready.  They taste and look better under cooked, rather than over.  Once the veggies start to blacken on the edges, it’s time to remove.

Ingredients

  • 1 yellow squash, sliced
  • 1 red bell pepper sliced
  • 1 green zucchini sliced
  • 1/2 purple onion, coarsly chopped
  • Optional: Cherry Tomatoes, Asparagus, Broccoli
  • 1 package of pre-washed mushroom caps, halved
  • 1/4 cup of EVOO
  • 1/4 cup of balsamic vinegar
  • 1 teaspoon of garlic salt
  • 1 teaspoon of Italian Seasoning

Instructions

  • 1. Take the sliced veggies and place them in a bowl.
  • 2. Cover with extra virgin olive oil, balsamic vinegar, garlic salt and Italian seasoning.
  • 3. Toss well and place in a grill basket.
  • 4. Pre-heat grill on med-low heat.
  • 5. Place grill basket on the grill and close.
  • 6. After five minutes, toss using tongs, close the grill again.
  • 7. After another five minutes, toss vegetables.
  • 8. It only takes 10-15 minutes for the veggies to be ready.
  • 9. If using asparagus: cut the bottom half off, and discard, only grill the top half
  • 10. If using cherry tomatoes: add whole
  • 11. If using broccoli: soak chopped broccoli in water first
