Italian Sausage Soup

This is a very hearty dish.

Ingredients

  • 1 lb. sweet or spicy Italian turkey or chicken sausage with the casings removed
  • 2 cloves of garlic minced
  • 5 cups of organic beef broth or stock
  • ½ cup of water
  • ½ cup of red wine (optional)
  • 1 can diced or crushed tomatoes
  • 1 cup thinly sliced carrots
  • ½ tbsp. of fresh basil leaves chopped 1 ½ cups of sliced zucchini
  • 1 can of red beans
  • 3 tbsp. fresh parsley chopped
  • ½ tsp. oregano

Instructions

  • 1. Brown sausage, remove.
  • 2. Sauté onions and garlic in pan.
  • 3. Sir in broth, water, wine, tomatoes,carrots and spices and add back sausage.
  • 4. Bring to a boil and simmer for 30 minutes.
  • 5. Stir in zucchini and beans and simmer for another 30 minutes.
  • 6. Serve in a bowl sprinkled with Parmesan cheese.
