Grilled Shrimp with Lemon Ginger Marinade

Lemon Ginger Shrimp on the Bar-B

Tasty meal from the grill.  Omit the olive oil for a Shape ReClaimed Phase 1 meal for the summer !

Ingredients

  • 1 lb wild caught shrimp, peeled
  • 1/3 cup of lemon juice
  • 1 clove of garlic
  • ½ tsp. paprika
  • ¼ tsp. ground pepper
  • ¼ cup of EVOO
  • ½ onion
  • 1 Tbsp. fresh ginger root
  • ¼ tsp. iodized sea salt
  • 2 Tbsp. fresh cilantro

Instructions

  • 1. Mix all of the ingredients, minus the shrimp, in a food processor or blender until fully mixed.
  • 2. Reserve about ¼ cup for basting.
  • 3. Pour the rest of the mixture over the shrimp, and put in the refrigerator for 2 hours to marinade.
  • 4. Skewer the shrimp.
  • 5. Grill over medium-high heat for 2 minutes on each side.
  • 6. Baste with the reserved mixture while grilling.
