Lentils with Brown Rice Side Dish

Lentils with Brown Rice

This simple main entree can also be made into a soup.

Prepare lentils the same way, and then add to boxes of vegetable broth, 1 tsp. of ground pepper, the juice of 1 lemon, and 2 cups of fresh spinach. Bring to a boil, and enjoy!

Ingredients

  • 1 package of Lentils
  • 2 Tbsp. of iodized sea salt
  • 5 cups of water
  • 3 Tbsp. EVOO
  • 1 large onion
  • 1 cup of brown rice
  • 1 Tbsp. minced garlic

Instructions

  • 1. Rinse lentils in a colander with water.
  • 2. Saute onion and garlic in EVOO until onions are clear and garlic is browned.
  • 3. Add lentils, rice salt and water.
  • 4. Bring to a boil.
  • 5. Lower heat and cover for 45 minutes, or until liquid is absorbed.
