Mediterranean Pita Pockets

These delicious pita pockets are healthy and attractive.  They are a healthy course, great for company. I serve with Greek salad on the side.

If you can’t find tzatziki sauce at the store, or prefer to make it fresh, here’s how:

Take 1 cup of plain greek yogurt andput in a food processor. Add 1 tablespoon of dried dill, 1 tablespoon of lemon juice, 1 peeled pickling cucumber (or half of an english cucumber peeled). Add 1/2 teaspoon of salt, and about 1/4 teaspoon of pepper to season.

If you enjoy garlic, add 1/2 of a fresh garlic clove to the processor, or 1/2 teaspoon of fresh minced garlic . Puree in food processor until thoroughly blended. Use this in place of store bought tzatziki sauce.

Ingredients

  • 4 whole grain pita pockets cut in half
  • 1 cup of store bought tzatziki (see above for recipe)
  • 1 head of romaine lettuce, shredded
  • 1/2 teaspoon of garlic salt
  • 1 lb of ground turkey
  • 1 large tomato diced
  • 1 large onion diced
  • 1 green, red or orange pepper diced
  • 3 Tablespoons of fresh chopped flat leaf parsley
  • 1 Tablespoon of EVOO

Instructions

  • 1. Cook ground turkey in a heated pan with extra virgin olive oil and half of the diced onion mixture until browned.
  • 2. Mix diced tomatoes, onions, peppers and chopped parsley, in a bowl.
  • 3. Take each pita pocket and fill with 2 Tablespoons of tzatziki sauce.
  • 4. Add about 3 tablespoons of meat to each pita pocket.
  • 5. Add about 2 Tablespoons of shredded lettuce.
  • 6. Top with fresh tomato-onion-pepper mixture and enjoy.
  • 7. Option: add feta cheese into the pita pocket if you like. add feta cheese into the pita pocket if you like. Option: Add feta cheese into the pita pocket if you like.
