No Bake Energy Bars

These energy bars are a good Paleo based recipe. A great way to gather energy for the start of the New Year, this recipe can be modified to your tastes.

Ingredients

  • 2 1/4 cup rolled oats
  • 2 scoops Metagenics Ultra meal rice protein powder (any rice, pea, potato or hemp protein can be used)
  • 1/2 cup unsweetened Shredded coconut
  • 1/2 cup all natural peanut butter (no sugar added) (can use sunflower seed butter or any nut butter of choice)
  • 1/2 cup pure maple syrup ** (can use maple flavored agave, reduce to ΒΌ cup)
  • 1/4 cup raw Chia seeds
  • 1/4 cup organic coconut oil (melted)

Instructions

  • 1. Combine all ingredients and mix well.
  • 2. Put mixture into 9x9 baking pan (I use a nonstick spray first) and press down into pan.
  • 3. Sprinkle with some more Shredded coconut.
  • 4. Place in freezer for 30 minutes to set.
  • 5. Then remove and cut into desired size bars/squares.
  • 6. Keep refrigerated.
