Pizza Potatoes

Great party appetizers. You can use just vegetables, or add all natural pepperoni or crumbled turkey sausage to make more filling and kick up the protein and flavor content.

Leftover idea: I use the insides of the potato skins for hashbrowns the following day, and saute them with peppers, onions and Jone’s naturals all natural Canadian bacon for breakfast!

Ingredients

  • 6 russet potatoes.
  • 1/2 package of Hormel all natural pepperoni
  • Option: Fully cooked Italian turkey sausage (sweet or spicy)
  • 1/2 cup of marinara sauce
  • 1/2 cup of Daiya mozzarella cheese
  • 1/2 tsp. of dried oregano
  • 1/4 cup of mushrooms, chopped (optional)
  • 1/2 onion, diced
  • 1 green pepper, diced
  • 2 tsp. of Extra Virgin Olive Oil

Instructions

  • 1. Scrub potato skins.
  • 2. Place each potato in a piece of foil.
  • 3. Bake in a 400 degree oven for 45 minutes.
  • 4. You may also place all of the potatoes in the microwave and cook and press the potato button to save time.
  • 5. Allow potatoes to fully cool, and then cut in half.
  • 6. Use a spoon to spoon out half of the potato mixture, creating a well for these ingredients.
  • 7. Heat oil in frying pan and add mushrooms, peppers and onions.
  • 8. Saute for 5 minutes, or until mixture starts to brown.
  • 9. Spoon marinara sauce over each potato and spoon vegetable mixture into each of the 12 potato halves.
  • 10. Sprinkle with cheese or non-dairy cheese of choice, I prefer Daiya mozzarella (made from tapioca) because it melts well.
  • 11. Top with chopped pepperoni or sausage and sprinkle potato skins with oregano.
  • 12. Return to oven at 400 degrees for another 12-15 minutes, or until cheese melts and starts to boil and brown.
  • 13. Allow to cool.
  • 14. Serve with extra marinara for dipping.
