Pizza Quesadilla – 3 Ways

This is a great dinner to make with leftover chicken or taco meat from another night. You can literally have dinner on the table in 10 minutes!

This is a fast and delicious dinner that kids and adults love!
You can add additional toppings and make several options to serve even the most picky of eaters.

I serve the quesedilla’s over a bed of shredded green leaf lettuce to add a serving of veggies.

You can also serve these on the side of a grilled chicken salad or a taco salad to make them as a side rather than the main attraction.

Ingredients

  • 1 package of whole grain tortilla's * you can use brown rice or corn tortilla's for a gluten free option
  • 1 package of mozzarella cheese
  • Optional ingredients: 1/3 cup all natural bbq sauce, red bell peppers, red onion, 1 grilled chicken breast diced or 1 cup of ground turkey cooked with taco seasoning, 1/2 cup of salsa.
  • Cooking spray
  • 1/2 cup marina sauce
  • Option: you can use Daiya cheese for a dairy free option

Instructions

  • 1. Warm up a small skillet and coat with cooking spray.
  • 2. Add one tortilla, 2 Tbsp. of marinara sauce and 1/4 cup of cheese to one side of the tortilla.
  • 3. Cover with a lid and allow tortilla to start to brown and cheese to start to melt, about 2 minutes.
  • 4. Then fold the side without the toppings over the other half, cover and cook another 1-2 minutes.
  • 5. Transfer to a plate and allow to cool 2-3 minutes before cutting in 4 wedges with a pizza cutter.
  • 6. BBQ Chicken Quesadilla: Prepare skillet and tortilla the same as above, but top tortilla with 2 Tbsp. of marinara sauce, 1 Tbsp. of BBQ sauce, Cheese, Grilled Chicken, Bell Peppers and Red onions.
  • 7. Sprinkle with oregano, cover, heat for 2 minutes, then fold over and heat another 2 minutes.
  • 8. Allow to cool 2-3 minutes before cutting into 3 wedges and serving.
  • 9. You want to keep the slices slightly larger than the pizza quesedilla so the toppings don't fall out.
  • 10. Taco Quesadilla: Prepare skillet and tortilla of your choice same as above and top one half with 2 Tbsp. of salsa, 3 Tbsp. of ground turkey taco meat and 1/4 cups of cheese of your choice (I like to use mexican blend, or Daiya pepper jack for dairy free).
  • 11. Cover and heat for 2-3 minutes until cheese starts to melt and tortilla starts to brown.
  • 12. Fold the half without toppings over, cover and heat an additional 2 minutes.
  • 13. Transfer to plate and allow to cool before cutting into 4 wedges with a pizza cutter.
