Potato, Apple and Onion No-Gratin

A very tasty vegetarian entree or side dish.

Ingredients

  • 6 Tbsp. of butter
  • 1 Tbsp. chopped fresh or dried thyme
  • 1/3 cup of water
  • 1/3 cup of dry white wine (chardonnay)
  • 1 ¼ lb of Yukon gold potatoes, peeled and sliced
  • 1 lb of granny smith apples, peeled, halved, cored and cut into slices
  • 2 large onions sliced
  • 1 tsp. of iodized sea salt
  • 2 tsp. of raw sugar

Instructions

  • 1. Preheat oven to 400.
  • 2. Grease a large baking dish.
  • 3. Melt 3 Tbsp. of butter in a skillet.
  • 4. Add onions, thyme and salt.
  • 5. Sauté 10 minutes, or until onions are translucent.
  • 6. When onions start to brown, remove and add remaining 3 Tbsp. of butter, 1/3 cup of water, wine and sugar and bring to a boil.
  • 7. Combine potatoes, apples, salt, and onion mix in a large bowl.
  • 8. Transfer to a baking dish, cover with foil, and bake covered for 55 minutes.
  • 9. Remove foil and bake for an additional 20 minutes uncovered.
  • 10. Let stand 10-15 minutes before serving.
