I like to heat real maple syrup and add the chopped pecans the hot syrup.  YUM!

Ingredients

  • 4 whole eggs, plus 4 egg whites
  • 1 cup organic canned pumpkin
  • 1/2 cup almond flour
  • 1 tsp. baking powder
  • 1/4 cup coconut milk
  • 1 tsp. pure vanilla
  • 1/2 tsp nutmeg
  • 1 tsp. cinnamon
  • 1-2 Tbsp. Coconut oil or coconut butter
  • Optional: 1/2 cup raw pecans, chopped

Instructions

  • 1. Mix all ingredients in a bowl except optional pecans.
  • 2. Heat a large skillet to medium heat and coat with coconut oil.
  • 3. Add 1/4 cup of mix for each pancake.
  • 4. These pancakes will not bubble like traditional pancakes, so flip when it has browned.
  • 5. Optional: serve chopped nuts on the pancakes, or add them to the mix.
