Quinoa Vegetable Soup

Lots of great veggies in this soup.

Ingredients

  • 1 cup quinoa (well rinsed)
  • ½ cup carrots, diced
  • ¼ cup celery diced
  • 2 Tbsp. onion, chopped
  • ½ cup green bell pepper, diced
  • Sea salt & pepper to taste
  • 2 tsp. olive oil
  • 4 cups of water
  • ½ cup tomato chopped
  • ½ cup cabbage, chopped
  • 2 cloves garlic, chopped
  • ¼ cup of fresh parsley, chopped

Instructions

  • 1. Sauté Quinoa, carrots, celery, onions, green bell pepper and garlic in oil until softened.
  • 2. Add water, tomato, and cabbage.
  • 3. Bring to a boil.
  • 4. Simmer 20-30 minutes or until tender.
  • 5. Season to taste and garnish with parsley.
