This squash makes a delicious side dish. Your house will literally smell like you are baking cookies and this dish tastes so sinful you will forget you are eating healthy and think it’s dessert.

Remember that Butternut squash always cooks down, some make sure you have enough for everyone.

Ingredients

  • 2 butternut squash, peeled, seeded and diced
  • 1/4 cup of coconut milk
  • 2 Tbsp. of Organic Raw Agave nectar
  • 1 tsp. pure vanilla
  • 1/4 tsp nutmeg
  • 1 tsp. cinnamon
  • 1 Tbsp. Coconut oil or coconut butter

Instructions

  • 1. Preheat oven to 375.
  • 2. Place butternut squash in a casserole dish.
  • 3. Add vanilla to coconut milk and pour over squash.
  • 4. Season with cinnamon, nutmeg and drizzle with agave nectar.
  • 5. Place small pieces of either coconut oil or butter throughout the top of the squash.
  • 6. Top with aluminum foil and bake for 40 minutes until fork tender.
  • 7. Allow 5-10 minutes to rest uncovered, stir and serve.
