Stuffed Zucchini Boats

Cooked a variety of ways Zucchini is delicious, versatile and of course, nutritious.  These boats can also be covered with tomato sauce, mozzerella cheese and covered with foil during baking to serve as a zucchini lasagna.

Ingredients

  • 5 Zucchini
  • 1 lb of ground turkey or turkey sausage
  • 1 tspn. of dried oregano
  • 1 tspn. of dried basil
  • 2 Tbspn. of EVOO (extra virgin olive oil)
  • 1 can organic tomato sauce
  • 1 small onion, diced
  • 1 tsp. minced garlic
  • 1 red pepper, diced

Instructions

  • 1. Cut off the top of each zucchini, and cut each zucchini in half.
  • 2. Use a spoon to core out the middle of the zucchini, leaving the shell in tact with a little layer of white so that the zucchini doesn't become too thin and break.
  • 3. Add the middle of the zucchini to the frying pan with oil.
  • 4. Add diced onion, garlic, red pepper and turkey or ground turkey sausage.
  • 5. Allow vegetables and meat to fully cook and add tomato sauce, basil and oregano.
  • 6. Once fully mixed, remove from heat.
  • 7. Preheat oven to 350 degrees.
  • 8. Place each zucchini half in a shallow glass pan and fill with meat and vegetable mixture.
  • 9. You may try the cooked mix first and add salt if desired.
  • 10. Place stuffed zucchini in the preheated oven and bake for 20-30 minutes depending on if you want a more al dente zucchini shell or a softer one.
  • 11. It will soften upon standing, so this is best when served right out of the oven.
  • 12. If you do not have a dairy sensitivity you may sprinkle with Parmesan cheese.
