Risotto with Tomatoes and Basil

Sun Dried Tomato and Basil Risotto

The key to this dish is mixing. Do not make it unless you have a good 40 minutes to babysit. I promise it is worth it though.

This is one of the best tasting side dishes ever. I often put shrimp scampi on top, or serve it as a side dish with seafood.

Ingredients

  • 1 bag of Arborio rice
  • 2 Tbsp. of EVOO
  • ¼ cup of sun dried tomato, chopped
  • ¼ cup of dry white wine (chardonnay)
  • 1 Tbsp. of iodized sea salt
  • 1 Large Onion, diced
  • 4 Tbsp. of butter
  • 2 boxes of natural chicken broth (warmed)
  • ½ cup of grated parmesan cheese
  • 1 Tbsp. minced garlic

Instructions

  • 1. Heat oil and 2 Tbsp. of butter over medium heat until melted.
  • 2. Add onion and cook until it starts to become clear, add minced garlic and cook until it starts to brown.
  • 3. Add the dry orzo pasta, and cook until it starts to become slightly brown, stirring frequently.
  • 4. Add 1 cup of broth and stir into rice mixture.
  • 5. Allow it to completely absorb, stir.
  • 6. Add 1 more cup of broth, and stir again.
  • 7. Repeat until you have added 1.5 boxes of broth.
  • 8. The key to this delicious dish is stirring. You need to stir and add broth at least every 5 minutes.
  • 9. It will take a good thirty minutes of this before your rice will start to soften.
  • 10. At this time add your wine instead of broth.
  • 11. When it cooks out, add another cup of broth, 2 Tbsp. of butter, dried basil, sun dried tomatoes, and salt.
  • 12. Allow to completely mix together.
  • 13. Remove from heat, with the last cup of broth poured over the top.
  • 14. Allow to sit for 5-10 minutes.
  • 15. Give it one good last stir before serving.
