Sweet Potato Fries

These sweet potato fries literally taste “fried” and are very fast and easy to make.  I don’t even like sweet potatoes and I can’t stop eating these.  They are SO GOOD!

Ingredients

  • 4 sweet potatoes, skins on, cleaned
  • 2 Tbspn. EVOO
  • 1/2 tspn. of sea salt (celtic is best)

Instructions

  • 1. Preheat oven to 425 degrees
  • 2. Cut sweet potatoes into even sizes, about 1/4 inch on each side. I use a mandolin slicer for this and it only takes about 5 minutes. By hand will take at least 10-15 minutes.
  • 3. Soak cut sweet potatoes in a bowl of cold water for 10-15 minutes. (This step really allows the fries to come out crispy instead of soft).
  • 4. Drain potatoes and place on a paper towel to dry fully for a few minutes.
  • 5. Toss the potato fries in the extra virgin olive oil and sprinkle with sea salt.
  • 6. Place potatoes on a baking sheet and bake for 15 minutes.
