Tomato Bruschetta Appetizer

Tomato Feta Bruschetta

This recipe is gluten free if served with gluten free crackers (Crunchmaster brand is my favorite) or Corn chips.

It can be served with fresh baked whole grain baguette (if not allergic to gluten).

Ingredients

  • 1 package of feta cheese
  • Option: may use sheep's or goat's milk feta if allergic to cow's milk
  • 1 bunch of green onions, chopped
  • 1/4 teaspoon of sea salt
  • 1/4 tsp of fresh ground pepper
  • 4 vine ripened or roma tomatoes, diced
  • 2 Tbsp. of extra virgin olive oil

Instructions

  • 1. Mix diced tomatoes, feta cheese and green onion together.
  • 2. Season with sea salt, fresh ground pepper and drizzle with olive oil.
  • 3. Mix well and transfer to refrigerator until ready to serve.
  • 4. Prepare at least one hour before serving to allow the flavors to properly set.
