Turkey Lo Mein

This recipe is very versatile and can me modified in many ways to make sure you and your family can’t get enough.  It’s very easy to make and tasty too.  Use spiralized zucchini instead of rice noodles to make Paleo friendly, pump up the veggies and lose the carbs!

I like adding extra zing with Sriracha Hot Sauce.

Ingredients

  • 1 package of rice noodles
  • 1 pound of ground pork, chicken or turkey
  • 6 ounces of fresh snow peas (1 package)
  • 1 cup of shredded carrots
  • 1 cup of sweet red chili sauce
  • optional (1/4 cup of fresh chopped cilantro)
  • optional (1/4 cup of Sriracha chile sauce if you like a little spice) - Huy Fong, Sriracha Hot Chili Sauce, 17 Ounce Bottle
  • optional 3 zucchini instead of rice noodles ( spiralize zucchini instead of rice noodles)

Instructions

  • 1. Bring water to a boil in a pot.
  • 2. Add noodles and cook to label directions.
  • 3. Drain noodles and set aside.
  • 4. Cook ground meat until fully cooked.
  • 5. Reduce heat to medium/low and stir in snow peas, carrots, chili sauce, cilantro and cook 2-3 minutes.
  • 6. Add noodles and toss until well coated in sauce.
  • 7. Serve with Sriracha chile sauce if you like to add spice.
