Scrambled Zucchini (Egg Free breakfast scramble)
2 zucchini or squash
1/2 pound of ground grass fed beef
1/2 onion diced
1/4 teaspoon of salt
1/4 teaspoon of pepper
1/4 teaspoon of cinnamon
Brown ground grass fed beef with onion. While that is cooking, cut each zucchini in half, and scoop out the insides with a spoon. You will not be using the skin part for this recipe, but save for making zucchini boats for dinner! Add zucchini pulp to frying pan and season with salt, pepper and cinnamon. This is a delicious breakfast option for those with egg allergies who miss a good breakfast scramble. The inside of the zucchini looks and tastes a lot like scrambled eggs, but your protein and flavor comes from the onion, grass fed beef and spices. Feel free to modify by using pork sausage instead and adding mushrooms and peppers. In that case, I would omit the cinnamon and season with basil and oregano instead. Bon Appetite!
